13. It is impossible to prepare any stable emulsion of toluene in water by simple dispersion of liquids. However, if a solution of alcohol in toluene is dispersed in water, the alcohol passes from toluene into water, leaving behind stable droplets of toluene.
If 10 g of a solution containing 15 wt% alcohol and 85 wt% toluene is mixed with 10 g of water, an emulsion will form spontaneously. The toluene droplet diameter is 1.0 μm, its density is 0.87 g/cm3, and the toluene/dispersion medium interfacial tension is 36 mN/m. Calculate the increase in the Gibbs energy associated with the formation of droplets, and the total Gibbs energy of this process, taking into account the energy of the transition of ethyl alcohol from toluene to water (-315 J).
